Sizzling Sunday Soup

Easy Peasy Pumpkin Soup.
Serves 3 Hungry People


This soup has become a favorite among my friends. It is very tasty, very healthy and really easy to make.
It is just what you need while you curl up on the sofa to get some me time.
I hope you enjoy making it as much as I do.

Recipe
1 Small pumpkin
1 Small onion
4 Cloves of garlic
4 Table spoons cooking cream
1 Table spoon yogurt or sour cream
1 Inch long ginger
Pinch of salt
Pinch of white/black pepper

Directions:

Peel and cut up pumpkin into little cubes. Place in a roasting pan and bake for about 30 minutes in a 350 degree oven


Chop onions and garlic.

When Pumpkin is soft. Saute onions, garlic and pumpkin with a pinch of salt in a pot over medium heat for about 5 to 7 minutes minutes.

Using a food processor or blender, blend up all the vegetables till its completely smooth. You might need to add up to a cup of water to get a liquid consistency.

Return to pot, add the cooking cream  and over low heat, gently simmer for 3 to 5 minutes

Serve in a soup bowl, add some yogurt on the top and a pinch of white pepper. Viola!


Enjoy alone or with some garlic bread. Invite some friends over to indulge in the goodness of this soup with you.
